Vegan Pancakes

Ingredients

For the pancakes:

  • 1 1/4 cups gluten free flour

  • 2 teaspoons baking powder

  • 1 1/4 cups plant-based milk

  • 1 super ripe banana

  • 1 tablespoon maple syrup

  • 2 teaspoons of vanilla extract

  • coconut oil

 

Toppings:

  • Coconut Yogurt

  • Berries

  • Cacao Nibs

 

Steps:

  1. Mix all of the pancake ingredients except the coconut oil together in a bowl or a blender.

  2. Drizzle some coconut oil in the pan to avoid sticking.

  3. Make pancakes in desired shape and size.

  4. Serve with the toppings and enjoy
